The majority of salmon now consumed in Spain comes from aquaculture, wild salmon grows in the waters of the northern hemisphere and reproduces in its rivers and lakes. The cost of reproduction is high and it is very rare that the progenitors of the Pacific salmon manage to return to the sea, although studies have shown that its Atlantic brethren manage two or three runs to the sea before succumbing to exhaustion. The European salmon is found in the Baltic sea and the rivers of France, Scotland, Norway and Northern Spain. Cultivated salmon is produced in Norway, Scotland and Ireland and tends to have less delicate flesh containing more fat. more... |

The most prevalent cheeses are made from goats’ milk either on its own or mixed with sheep’s milk to make it creamier. Less frequently due to the dearth of pastures, cows’ milk is occasionally used.
Whilst some producers cure or smoke their cheeses the most popular flavour and method is to serve the cheese freshly made. There are few bars in the Islands which cannot offer a tapa of goats’ cheese to accompany your chosen tipple. more... | | FoodBalearics - 10.05.2008 - A favourite holiday choice for many tourists, the Balearic Islands are in the Mediterranean off the Eastern coast of Valencia.
