A great selection of wines and a kitchen which explores the fusion and perfect harmony of top quality products with the professionalism and expertise of owner and head chef Juan Ayza. As well as the special rice and paella dishes you can enjoy an exquisite range of aperitifs, fish and meat dishes and home made desserts. Juan Ayza Albiol (Benicarló 1968) studied cooking in the Castellón hotel school. He finished his training in a number of different restaurants and hotels in Spain and the Americas, including the Gran Casino de Cataluña and the Hotel Tres Reyes in Pamplona. Later on he joined the Meliá chain in the Caribbean, opening Spanish restaurants in the Meliá Puerto Vallarta and Meliá Cancún. He was involved in a Spanish Gastronomy fortnight in Mexico with a number of other top chefs. He left Mexico, a country he loves and which has influenced his cooking greatly, for Puerto Rico where he worked in Ramiro’s de San Juan. When he ended his Caribbean adventures he returned to Spain and was appointed head chef in the Hotel Bahía del Duque in Tenerife, where he remained for three years until 1996 when he opened his own restaurant, the Rincón de Arroz, in Los Cristianos.
