A chef with one of the leading hotels in the south of Tenerife, the Jardín Tropical, has been awarded first prize in this year’s Canarian Chef Championship.

- Philippe Denis, from Belgium, has worked for the hotel since 1999 and has 24 years experience in the catering trade. He works in the hotel’s El Patio restaurant which has also received recognition this year by being voted Best Canarian Restaurant by the Michelin Guide.
Participants had to produce two dishes – one obligatory dish based around a pork rib for which he was given set ingredients and another dish of his choice. Denis says his intention with both dishes was to create interesting and new textures whilst preserving the tastes of the individual ingredients.
The competition, the third to be held to date, was held in the Recinto Ferial in Santa Cruz. The judges were all experts within the field and entries were judged on the smell and taste of the food, hygiene and organisation, technique, the originality of the recipe, decoration and presentation.
By winning the competition Denis has gained the right to represent the Canaries in Spain’s National Chef Championship in November.
